Healthy Stirfry Veg with Noodles
Using coconut oil to fry these organic veggies with a delicious ginger and soy based sauce gives it a great taste but is incredibly healthy as well.

Makes: 4 servings
Ingredients
Coconut oil
Sesame oil
Soba noodles
Organic vegetables - for example
Courgette
Carrot
Broccoli
Red pepper
Bean sprouts
Fresh coriander leaf
For the sauce
Tamari - or light soy sauce - 4 tbsp
1 inch piece of ginger, chopped finely
Squeeze of lemon juice
Freshly ground black pepper
Method
Make the sauce by combining the ingredients in a small bowl.
Cook the noodles in salted water according to the packet instructions, drain, and put aside.
Chop the vegetables into bite-sized pieces.
Heat a large wok or frying pan over a medium-high heat and allow the coconut oil to heat.
Once the pan is nice and hot add the vegetables and toss in the oil until they are coated.
Add a few tablespoons of water to allow the veg to start to soften.
Add the sauce and make sure the veg is fully coated.
Stir in the beansprouts and noodles.
Finish with a dash of sesame oil and some freshly chopped coriander leaf.
