Healthy Stirfry Veg with Noodles

Using coconut oil to fry these organic veggies with a delicious ginger and soy based sauce gives it a great taste but is incredibly healthy as well.

Preparation Time: 20 minutes
Cooking Time: 5 minutes
Makes: 4 servings

Ingredients
Coconut oil
Sesame oil
Soba noodles



Organic vegetables - for example
Courgette
Carrot
Broccoli
Red pepper
Bean sprouts
Fresh coriander leaf



For the sauce
Tamari - or light soy sauce - 4 tbsp
1 inch piece of ginger, chopped finely
Squeeze of lemon juice
Freshly ground black pepper

Method
  • Make the sauce by combining the ingredients in a small bowl.
  • Cook the noodles in salted water according to the packet instructions, drain, and put aside.
  • Chop the vegetables into bite-sized pieces.



  • Heat a large wok or frying pan over a medium-high heat and allow the coconut oil to heat.
  • Once the pan is nice and hot add the vegetables and toss in the oil until they are coated.
  • Add a few tablespoons of water to allow the veg to start to soften.



  • Add the sauce and make sure the veg is fully coated.
  • Stir in the beansprouts and noodles.



  • Finish with a dash of sesame oil and some freshly chopped coriander leaf.
