Healthy Sweet Potato Pancakes

This is a healthier alternative to the traditional pancakes. Sweet potatoes are rich in Vitamin A and fibre, among other things. This recipe is also free of refined sugar and uses wholemeal flour. Topped with plain yoghurt and berries, this dish makes one nutritious low GI breakfast that is good for sustained energy. Your kids won't even care that it is the healthy version because it tastes just as good as the real thing.

Preparation Time: 15 minutes
Cooking Time: 30 minutes
Makes: 2 servings (approx. 6 medium sized pancakes)


250g sweet potatoes, peeled
1/2 cup wholemeal flour
1/2 cup plain flour
2 teaspoons baking powder
a pinch of salt
1 teaspoon cinnamon powder
1/4 teaspoon nutmeg
1 teaspoon vanilla essence
1 cup soy milk
1 egg

For the topping:
Plain greek yoghurt
frozen mixed berries, thawed (or use fresh)


Cut sweet potatoes into small pieces, and steam until tender (about 10 minutes).

Mash sweet potatoes with a potato masher or puree in a food processor.

Sift flours and baking powder together in a large bowl. Add in salt, cinnamon and nutmeg.

Whisk egg using an electric mixer for 30 seconds until frothy.

Add the egg, milk, vanilla essence and mashed sweet potato into the flour mixture. Mix until just combined.

Heat a non-stick pan and lightly grease with a cooking spray. Drop three tablespoonfuls of batter at a time, and cook until golden brown.

when bubbles start to form, the pancake is ready to be flipped

Top pancakes with a few dollops of yoghurt and a handful of berries.

Heat a few spoonfuls of honey in a microwave on high for 15 seconds, and drizzle pancakes with the warm honey.

These are delicious, kids and adults both loved them!
Hi alesl, yes sorry it seems that I've forgotten to incude the sweet potato in one of the steps (will edit it soon). The sweet potato is mixed in with the flour mixture with the rest of the wet ingredients.
Erma I see the sweet potato is cooked & mashed but then nothing else is done with it. The flour/egg/milk mix will make pancakes. When is the potato used?
