Healthy Tapioca Pudding with Banana

This recipe has no added sugar and is easy to make and looks impressive!

Preparation Time: 5 minutes
Cooking Time: 30 minutes
Serves: 4 - 5

Ingredients
1-litre almond milk
130 g tapioca
1 cinnamon stick
1 tsp butter
3 - 4 ripe bananas, sliced
Pinch cinnamon
Raspberries or blueberries, for garnish

Method
  • Boil the milk with the cinnamon stick, and add the tapioca pearls. I did not soak them as too often they have disintegrated after soaking!


  • Cook for about 25 to 30 minutes, turn off the heat and leave for a while.

  • Melt the butter in a small frying pan, and add the bananas and a pinch of cinnamon.

  • Fry for about 3 to 4 minutes.


  • Divide the tapioca and fried bananas between 4 or 5 serving glasses by arranging them with a layer of tapioca and a layer of bananas.

  • Repeat till the glasses are full.


  • I only made up one as I was eating alone, and I made them up each night as I needed them.


  • No added sugar though I did add a bit of natural sweetener as otherwise, it is a bit bland.

  • A great easy and delicious dessert.
