Healthy Thai Meathballs

Great for entertaining or for an easy dinner served with a fresh slaw. You can easily adapt the ratio of ingredients and size of meatballs to suit your liking.



Preparation Time: 30 minutes overnight (optional)
Cooking Time: 30 minutes
Makes: 44 meatballs

Ingredients
1kg pork & beef mince
1 red onion finely chopped
20g coriander (including stalks) finely chopped
zest of one lemon
1 chilli finely chopped/crushed
1 tbsp crushed garlic
3 tsp ground cumin
1 tsp chilli garlic sauce
1 tsp tandoori paste
2 tsp garlic salt



Method
  • Combine the chopped onion, coriander, chilli and zest with the mince.
  • Add the garlic, paste, spices and combine.
  • Cover and refrigerate mince to allow flavours to intensify overnight (optional).



  • Preheat oven to 180 degrees (fan forced).
  • Roll meatballs into desired size. I made them small and yielded 44, but you could make them larger for a meal.



  • Place on tray and bake for 30 minutes or until cooked through.
  • Serve with a dipping sauce of soy, kechap manis, lime and sweet chilli to desired taste.
