Healthy Three-Ingredient Pancakes

You’ll be hard pressed to find a simpler pancake mix than this one, which only has three ingredients (and one of them is water). The resulting pancakes aren’t that sweet, but work great as base for your choice of toppings.

My favourite way to eat these pancakes is with almond spread and banana

Preparation Time: 5 minutes
Cooking Time: 25 minutes
Makes: Up to 14 small pancakes, depending on the size you like them

Oat bran

All you need to do is add water


Preheat fry-pan on low/medium heat.

Beat the egg.

Add two cups oat bran.

Add 1 1/2 cups water (if you don’t want to make as many, you can just add one cup of oat bran and 2/3 cup of water).

Mix everything together, adding oat bran and/or water to get the consistency you like.

I added some leftover corn kernels to some of my mix

Spoon small amounts into the frypan (I’ve found these pancakes don’t stick to the pan at all, so I don’t use oil, but you might not be so lucky).

Cook for a few minutes, until you can see them starting to firm up.

You can see these are starting to dry out and go firm

Flip them over and cook on the other side. They’re done when they’re firm to the touch.

Repeat the process for the rest of the mix (you’ll notice that the oat bran absorbed the water in the mixture while you cook your first batch as these pancakes are essentially oatmeal with egg, so you might want to add some more water).

Add your choice of toppings.
