Healthy Vegetarian Nachos
Nachos can and should be healthy. The dish usually has beans, salad and a healthy dose of chilli but gets a bad rep because it is smothered with sour cream and sitting on top a pile of salty, fatty corn chips.
My recipes uses
sweet potato crisps and regular potato crisps as a base,
healthy homemade beans , heaps of salad and a dose of
hot chilli . It is easy to make and won't leave you feeling bloated of guilty.
Making clean versions of unhealthy foods leaves you satisfied and feeling good.
So good.
Preparation Time: 20 minutes
Cooking Time: 40 minutes
Makes: 2 servings
Ingredients
1 Serve
sweet potato crisps
4 Small white potatoes
1/2 Avocado
2 Serves of
healthy homemade beans
2 Tbls Greek yogurt
1 Tsp
hot chilli
Handful or rocket
6 Jalapenos
1/4 C shaved cheese
Nourishing ingredients.
Method
Peel, finely slice and organise potatoes on a lined baking tray.
Make sure they are spread out.
Bake in a moderate oven for about 20 mins flipping half way through.
Should be beautiful and crisp.
Arrange the potatoes on your plate.
Let the assembly begin.
Spoon on the hot beans.
Scatter the shaved cheese.
I add the cheese now so the hot beans help melt it.
Add the rocket and avocado.
Mmmmm avocado.
Spoon on a dollop of yogurt, scatter a few jalapenos and finish with a tiny drop of hot chilli sauce.
Healthy vegetarian nachos.
