Hearty Sausage Snack

Hard dough bread is arguably a staple food or a treat, in Jamaican households, garnished with sausage, carrots, thyme and voila, the perfect snack for anytime of day. There is no kooky story behind this recipe, I literally made it up one quiet lunch time and have made it several times since, but it is quite hearty and filling. I'd recommend wholewheat brown bread and no butter for those on a low-fat diet and use good quality sausages.

Preparation Time: 5 minutes
Cooking Time: 45 minutes
Makes: 1 servings



Ingredients
1 thick slice of hard dough bread
1 sausage
4 garlic cloves
3 cherry tomatoes
Sprig of thyme
A little orange pepper

Method
  • Firstly, pre heat the oven to gas mark 6 or fan oven 180, then fry the sausage until brown on all sides(15 mins) .



  • Whilst it's frying, halve the tomatoes and slice the pepper.



  • Then crush the garlic.



  • Place hand on top of the blade facing flat and add pressure.



  • Once the sausage is brown on all sides, lay the raw pepper and garlic in the oven on a tray.



  • Add the sausage.



  • And the tomatoes and thyme.



  • Leave for half an hour in the oven to cook.



  • Once 25 mins have past, slice the hard dough bread for one thick slice and add to the toaster or grill.



  • Add butter .



  • Take the now baked vegetables and sausage out of the oven and plate up.
