Heathy Banana Bread

Amazing, delicious, healthy banana bread!
It tastes just as good as it looks and smells!

Preparation Time: 10 Minutes or less
Cooking Time: up to an hour
Serves: 8

Ingredients
2 1/2 cups of wholewheat flour
1 1/2 tsp of baking powder
Pinch of salt
1 cup of over ripe bananas (mashed)
1/3 cup of 100% pure maple syrup
3 large eggs
1 tsp of vanilla extract
1 cup of oat milk or natural Greek yogurt
3 1/2 tbs coconut oil (melted)
walnuts and shredded coconut optional.

Method
  • Pre-heat oven to 160 fan forced or 180 not fan forced.
  • Grease loaf tin and line with baking paper.
  • Mash enough over ripe bananas together to form one cup.
  • Add all the dry ingredients into bowl and mix together.
  • Add wet ingredients to dry ingredients and mix together until combined nicely.

  • Pour mixture into loaf tin.
  • Add shredded coconut on top (optional)
  • Place in oven for up to and hour, use skewer or fork to test the middle.
