Herby Zucchini Fritters

The flavour of these fritters are knockout! Delicious, healthy and with plenty of texture; a healthy side dish or main for meatless monday.



Preparation Time: 10-15 minutes
Cooking Time: 12-15 minutes
Makes: 8 servings

Ingredients


2 zucchini, grated
2tbs minced basil
1tbs minced chives
2tsp fresh chopped chives
1/4c almond meal
1/4c grated parmesan cheese
2 eggs

Method
  • Grate zucchini and place in cloth-lined bowl


  • Squeeze zucchini in cloth to remove moisture, drain liquid and put zucchini in bowl


  • Add remaining ingredients and combine


  • Heat (non stick) pan on medium heat. Drizzle olive oil in pan to coat
  • Take a small handful (or measure 1/4c mixture) and place in pan. Push down with spatula
  • Allow to cook for ~2mins or until firm on bottom



  • Flip and cook on other side for another 2mins (pushing down with spatula)
  • Be careful as will be delicate to handle!!
  • Repeat with remaining mixture
  • Allow to cool slightly and this will firm the fritters for serving



  • Delicious to serve with Greek yoghurt spiked with lemon juice and mint
