Hoisin Honey Garlic Chicken
This incredibly tender chicken with Asian inspired flavours, is quick and easy to prepare. Make ahead for a stress free dinner party.

Ingredients
2 chicken breasts
1 spring onion
2 cloves crushed garlic
1/8 cup hoisin sauce
1/4 cup soy sauce
1/4 cup runny honey
1/2 tbsp rice wine vinegar
1/2 tsp groundnut oil
1 tsp ginger paste
1/2 tbsp corn flour
Sesame seeds to garnish
Method
Preheat oven to 180c or use a slow cooker on low if you have one.
Put the chicken in the bottom of the slow cooker or heavy based casserole dish.
Separately, mix together the soy, hoisin, vinegar, honey, groundnut oil and garlic.
Cut the white part off the spring onion, slice finely and add to the marinade.
Pour the marinade over the chicken and cook for between 2 to 3 hours. The length of time will depend on how large and thick your chicken breasts are.
Once cooked through, remove the chicken from the slow cooker / casserole dish, allow to rest for 5 minutes and then shred.
Mix the corn flour with a couple of tablespoons of the marinade until you create a smooth paste.
Add the corn flour paste back into the marinade and cook until thickened.
Add the thickened marinade to the shredded chicken and mix.
Serve over sticky white rice with a scattering of sesame seeds and the green from the tops of the spring onions.
