Home made Pizza Base with Caramelized Onions Two White Cheeses and Potato

It is, of course, much easier to buy a pizza base, however making it yourself does not really involve a lot of work, and you know there are no chemicals in it!

I have used a White Castello as one of the cheeses, and on the home made base I have spread cream cheese for a different slant on the usual tomato paste.

I have also made it an oblong shape instead of round and it does not matter that it is uneven - this adds to the rustic look of this very tasty pizza.

Preparation Time: 20 minutes plus proofing
Cooking Time: 25 minutes
Makes: 2 servings, or 6 pieces

Ingredients
For the Pizza dough
1 cup sifted flour
½ tsp caster sugar
¼ tsp salt
1 tsp yeast
1/3 cup lukewarm water
1 tbsp oil

For the topping
125 g [link http://reviewclue.com.au/philadelphia-original-spreadable-cream-cheese/ spreadable cream cheese]
1 medium potato, unpeeled
1 red onion, sliced
60 g [link http://reviewclue.com.au/white-castello-creamy-soft-cheese/ Castello white] or a blue cheese, crumbled
Olive oil to spray

Method
For the dough
  • Mix the flour, sugar, salt and yeast.

  • Make a well in the middle and stir in the combined water and oil. Stir until it forms a soft dough.

  • Turn this onto a floured surface and knead it for about 3 minutes.

  • Put it in a lightly greased bowl, cover with plastic wrap, and let stand in a warm place for about 30 minutes or until the dough has doubled in size.
  • This was difficult as it was a freezing day, so I wrapped it in a blanket and it took about 1 hour


    For the topping
  • Roll out the pizza dough on a floured surface (I did this on a sheet of baking paper) to form an oblong base - about 20 x 30 cm.


  • Microwave the whole potato for about 1 - 2 minutes.

  • Fry half the red onion slices for about 10 minutes, add a touch of vinegar, and then add the very thinly sliced potatoes for about 5 minutes.
  • This is optional as you could also put these on raw


  • Spread the cream cheese as evenly as possible onto this base.
  • Make sure the cheese is not cold or it is difficult to spread


  • Add the potatoes, onions, any left over raw onion, and the crumbled white cheese.


  • Spray with a bit of oil.

  • Bake at around 180° fan forced for about 15 minutes.

  • Cut and serve.
  • I ate half as my meal
