Home Made Tomato Salsa on Nachos

NACHOS - It is another meal that I love - OK, so it is not healthy, but OK every once in a while. The only thing that annoys me about making these for one person is that I waste most of a bottle of tomato pasta sauce!

So I decided to make some salsa instead and also make a nacho cheese sauce instead of just putting cheese throughout. It turned out really yummy and I ate the whole lot which I had made for two meals!

Preparation Time: 20 minutes
Cooking Time: 25 minutes
Serves: 1-2

Ingredients
For the salsa
2 tomatoes
1 green chilli
¼ tbsp lemon juice
1 pinch black pepper
½ small onion
Coriander, chopped - to taste

For the nacho sauce
1 tbsp butter
1 tbsp plain flour
½ cup milk
About ¾ cup cheese of choice
Pinch chili powder

For the nachos
¼ to ½ packet nachos

Method
For the salsa
  • Char the onion on a gas flame - this is optional. Turn it around on the flame until the skin is blistered but not burnt.


  • Allow to cool for 15 minutes - this will give it a smokey flavour.

  • Peel the onion and chop it very finely.

  • Chop the tomatoes very finely, and mix with the onion, chilis, and coriander.

  • Add the lemon juice, salt and pepper and allow to stand for 15 minutes or more in the fridge while you prepare the rest.


  • For the cheese sauce
  • Add the butter and flour into a saucepan and heat until it bubbles. Cook for about a minute and then whisk in the milk.

  • Turn the heat up slightly and continue stirring until the mixture thickens. Turn off the heat.

  • Add the cheese - you may need to turn the heat back on low if the cheese does not melt.


  • Once the cheese is melted, stir in the chili powder or flakes and add pepper to taste. If the sauce is too thick, add some more milk though I left the sauce very thick.

  • For the nachos
  • Line a pie dish or similar with baking paper and spread a layer of corn chips on the bottom.

  • Add a layer of the salsa.

  • Add a layer of the cheese and spread as best you can.


  • Repeat this till all ingredients are used up.

  • Add a bit of grated cheese to the top and cook at around 180° fan forced or 160° for about 20 minutes.
