Ingredients For the waffles 115 g self raising flour
½ tsp cinnamon
½ tsp mixed spice
½ tbsp sugar
½ cup milk
1 egg, separated
For the apples 2 medium apples, peeled and cored
45 g butter
45 g sugar
35 g sultanas
For the spiced nuts 50 g walnuts
10 g butter
2 tsp sugar
1½ tsp cinnamon
Method For the spiced walnuts
Place the nuts in one layer on a tray and bake in a slow oven for about 30 minutes.
Shake occasionally until they turn a bit browner than they are naturally.
Put the walnuts in a bowl, stir in the chopped butter, sugar and cinnamon while still hot.
Mix well and allow to cool.
For the waffles Put the flour, spice, cinnamon, and sugar into a bowl and gently pour in the milk and egg yolk.
Dough will be thick at this stage
Beat the egg whites until just stiff, and gently fold this into the batter, which will still be quite thick.
Put about 1/3, or less, of a cup in your greased and heated waffle pan (or in a buttered frypan for pancakes).
Close the waffle pan and cook for about two minutes. For the frypan, cook for a few minutes and turn over.
Repeat with the rest of the batter.
For the apples
Cut the apples into thin slices.
Heat the butter in a frypan and add the sugar - stir over a low heat till the sugar dissolves but you do not want it to boil.
Add the apples and sultanas, mix until the apples are tender - about 5 - 8 minutes.
Serve apple mixture on top of the waffle, or pancake.
