Homemade Baked Beans

Baked beans on toast are one of those treasured dishes that can easily be whipped out for breakfast, lunch, dinner, or a filling snack.



Unfortunately however, store bought varieties are loaded with sugar, salt and preservatives that make this tasty comfort surprisingly bad for us.

Get the best of both worlds by making this quick homemade version served best on steaming hot toast.

Preparation Time: 5 minutes
Cooking Time: 20 minutes
Makes: 6 servings

Ingredients
1 tbsp olive oil
2 brown onions, diced
1 tbsp garlic, minced
2 tsp smoked paprika
2 x 400g can chopped tomatoes
2 x 400g can beans (butter or cannellini), rinsed
12 slices rye/ sourdough bread

Method
  • In a large frying pan, heat the oil over a medium heat and add the onion and garlic. Cook until soft.

  • Add the paprika and mix through well.
  • Stir through the tomatoes and bring mixture to the boil. Reduce to a simmer and leave for 10 minutes or until thickened.

  • Fold through the beans, cooking until heated through. Remove from heat.

  • If desired, toast the bread before topping with a generous serve of the baked beans.
