
Pickled Herring
Beetroot is a very healthy vegetable and can eaten by either cooking it and slicing, roasting it, using it in a salad or as I have done, using it in a typical Jewish Herring recipe which is pickled and eaten on rye bread.
You could use the jars of rollmops or similar if Matjes herring is not available.
The great part of this recipe is that you also have some homemade beetroot left for sandwiches or salads, this is so much nicer than the bought tins with a lot of sugar in them.
Preparation Time: 20 minutes
Cooking Time: 50 minutes for beetroot
Makes: 10 servings
Ingredients
Fresh beetroot (I used 4)
Packet Herring (I used matjes)
Onion (I used 1 shallot)
¼ large apple -green
About 5 - 7 tbsp white vinegar
3 - 4 tbsp sour cream
1 - 2 boiled eggs, chopped (optional)
tsp sugar
Method
First step in this recipe is to make the beetroot. Wash them thoroughly and cook whole, unpeeled in water almost covering them.
Boil these for about 40 - 45 minutes or until they are soft but not overcooked.

Let water run over the herring for about 15 minutes as they are often too salty.

Pat the herring dry and cut into small pieces.

Cut the onion, you can use more if you like onions, and cut the apple, which can be peeled. Mix this in with the herring pieces.

Once the beetroot is cooked (do not throw out the water) and it has cooled down a bit, peel it, cut the ends off, cut it into slices reserving about half of one beetroot for the herring.

You can either leave this and come back to the beetroot, or do the beetroot first by adding the now red liquid from when it was cooked, adding some vinegar, topping up with water to cover and add about a teaspoon or two of sugar.

This will now keep for months in the fridge
Cut the remaining piece of beetroot into small pieces and add to the herring mixture.

Mix this all up and add the sour cream. I ran out of it, so added some yoghurt as well.
If using eggs, add these also.
This recipe is very adaptable and you can change quantities as per your tastes and likes.

You have now made two recipes out of the one. If you have not tasted herring pickled before, try this one, it is excellent.
