Homemade Chai Latte Mix
There's just something about chai latte that I really love. Its rich aromatic and spicy taste is highly addictive. Chai is originally a traditional beverage from South Asia, and is usually made by brewing black tea with various mixture of spices and herbs. Of course, there are different ways in which chai is made, and the taste varies too.
If you are an avid chai drinker like me, you might want to have a go at making your own mix and give this recipe a try. It takes only a few simple steps to make. Not only will you save money, you won't have to worry about any nasty food additives, as is the case with purchasing instant mixes from retail stores.
It also makes for a DIY edible gift idea. Just place the chai mix in a pretty jar and decorate with a nice ribbon and gift tag, and voila!

Makes: 9 servings
Ingredients
For the Chai Latte Mix
6 cinnamon sticks (30g)
20 cardamom pods
6 whole cloves
1 star anise
9 teaspoons good quality strong loose leaf black tea
2 1/4 teaspoons ginger powder
For Brewing Chai Latte (per serve)
1 Tablespoon Chai Latte Mix
½ cup water
½ cup milk
1 Tablespoon sugar (or to taste)
Method
Roughly grind cinnamon sticks, cardamom pods, cloves and star anise with a mortar and pestle.
Place the coarsely ground spices, together with the remaining ingredients, in a small storage jar.
Shake the jar to combine the chai mixture evenly. Now the chai mix is ready to be used.
Store in a cool dry place, away from sunlight.
Brewing Instructions
Combine Chai Latte Mix and water in a small saucepan.
Heat the mixture over a stove on MEDIUM, and bring to the boil (approx. 2 minutes).
Pour in milk and heat for a further 1 minute.
Remove from stove.
Strain the chai mixture into a teacup.
Stir In sugar, and serve hot or cold.
