Homemade Cheesecake Tart
In this recipe, the cake is rich in lemon and cheese flavour but low in sugar. It is a New York style cheesecake but in tart size ( four 12cmx2cm tart pans are used), so best to serve one tart per person.

Cooking Time: 35 minutes
Makes: 4 servings
Ingredients
120g butter cookies
20g unsalted butter, melted
250g cream cheese
40g raw sugar
2 tbsp fresh squeezed lemon juice
2 tbsp fresh milk
1 egg
1 tbsp plain flour, sifted
some thin lemon slices to serve
Method
Pre-heat oven to 200°C.
Put 120g butter cookies to a clean plastic bag, use a dough roller to beat them into fine crumbs.
Add 20g melted butter, 1 tbsp fresh milk to the bag, use hands to message and combine into a sticky mixture.
Brush some butter on the tart pans.
Use a spoon to press the mixture over base of tart pan.
Bake in oven at 200°C for 5 minutes, to evaporate excess moisture from the cookie base.
Take them out and reduce the heat to 180°C.
In a mixing bowl, add 250g cream cheese and 40g sugar, beat until light and fluffy.
Add an egg, beat to combine.
Add 1 tbsp plain flour, 1 tbsp fresh milk and 2 tbsp squeezed lemon juice, whisk to combine.
Pour and divide the mixture into tart pans with cookie base in them.
Bake in oven at 180°C for 35 minutes.
Take out and let cool for 1-2 hours.
Remove from tart pans carefully, transfer to plates.
Refrigerate for a few hours or overnight to firm.
Garnish with a thin lemon slice, then serve.
