Homemade granola bars

This is a delicious recipe that kids will enjoy at birthday parties. It's healthy, filling and exciting.



Preparation Time: 20 minutes
Cooking Time: minutes
Makes: 10 servings

Ingredients

1 cup fresh dates
¼ cup erythritol, SweetMe (or honey)
¼ cup peanut butter or almond butter
1 cup almonds, roughly chopped
1 ½ cups rolled oats


Method:
  • Toast oats in oven for 15 minutes
  • Combine oats and dates in food processor and blend for 1 minute
  • Combine oats, dates and almonds in a bowl
  • Melt peanut butter and erythritol 1 tsp. of water (or honey) over low heat until fully combined
  • Stir and pour peanut butter mixture onto oat mixture until everything is fully combined
  • Line a 8cmx8cm pan with baking paper
  • Pour mixture into pan and flatten the base evenly
  • Cover with cling wrap and put in fridge to cool for 15 minutes

  • This recipe is great for after school or for kids to eat while playing outdoors in their cubbie house .
