Greek yogurt with honey is my ultimate go-to snack when I'm peckish, or just too hungry to wait those ten minutes before dinner.
Preparation Time: Overnight
Cooking Time: 30 minutes
Makes: 5 servings
Ingredients
4 pints of organic full fat milk
2 tblsp of live, whole yogurt
1 tblsp of honey
Mesh strainer
Method
Pour the milk into a large saucepan and heat the milk for 30 minutes on low.
After 30 minutes remove the milk from the heat, and leave to cool for 30 minutes.
Add the yogurt to the saucepan, stir, cover and leave overnight.
In the morning remove the lid and place the mesh gauze over a funnel. Carefully pour yogurt through the the gauze.
Be careful because I spilled this all over the counter. Let the watery whey seep through the gauze then scrape the thick, remaining (now Greek) yogurt on top into a jar.
Stir in the honey and enjoy your own authentic, home-made Greek yogurt with honey.
