Homemade Paneer Indian Cottage Cheese
Paneer is a fresh curd cheese made from cow's milk. This cheese will not melt and no aging is required.
Paneer is the basic ingredient in many Indian milk desserts. This cheese is made by adding an acid (vinegar, lemon juice or citric acid) to hot milk.
Preparation Time: 1hour
Cooking Time: 20 minutes
Makes: 1 cup
Ingredients
6 cups of whole milk
1/4 cup lemon juice
1/2 cup hot water
Method
Mix lemon juice and hot water and keep aside.
Boil milk in a heavy bottomed pan over medium flame. Stir continuously.
When the milk starts to boil, reduce the flame to low. Add the lemon juice- water mix gradually and stir gently. Add a little juice at a time.
Milk will start curdling. Now remove from the heat and let the milk solids separate from the whey. Stir occasionally.
Place a muslin cloth or cheesecloth over the strainer or colander. Pour the curdled milk into it.
Place it under a cold tap. Wash the milk solids to remove the sourness of lemon juice.
Discard the whey or you can use it to make bread.
Wrap the curd cheese in the muslin cloth and squeeze well to remove excess water.
Place a weight over the wrapped curd cheese for 1 hour to remove excess water.
I made it into crumbles to make ras malai.
Most of the Bengali milk based sweets are made using paneer. Try making this fresh paneer at home.
