Hommus and Haloumi Open Sourdough Sandwich

A blend of textures and flavours makes this the perfect light and healthy summer lunch.



Hommus, Haloumi, Sourdough Sandwich


Preparation Time: 10 minutes
Cooking Time: 7 minutes
Makes: 1 serving

Ingredients
Olive oil
Asparagus
Haloumi Cheese
Hommus Dip
Tomato
Sourdough Bread
Spring Onion



Hommus, Haloumi, Sourdough Sandwich


Method

Heat oil in frying pan

Slice Haloumi cheese and cook until slightly brown on both sides

Cook asparagus in the same frying pan or you can blanch it in a different pot



Hommus, Haloumi, Sourdough Sandwich


Spread hummus over sour dough bread

Top sourdough bread with cooked Halumi, asparagus and tomato

Sprinkle chopped spring onions on top

Season to taste.
