Had a phone call that some visitors where coming by so I had to whip up something quick. Done in half an hour these are great for unexpected guests or for anytime you feel like something sweet. All of the ingredients I use in this besides the eggs are organic so they are healthier than any store bought treat.

With muffins this size the recipe makes 6, but you can make more if you make them smaller.
Preparation Time: 5 minutes
Cooking Time: 25 minutes
Makes: 6 muffins
Ingredients
1 cup self raising flour
1/2 cup frozen or fresh blueberries
1/4 cup almond milk
3-4tbs of honey
1 tsp vanilla bean paste
3 tablespoons of coconut oil
2 eggs
2 teaspoons of Lucuma (superfood powder)
Method
Preheat oven to 180 degrees Celsius
Whisk eggs one at a time with the honey, vanilla and coconut oil.

Whisking in the eggs to the honey mix
Add in the Lucuma and sifted flour.
Start stirring with wooden spoon and slowly add in milk as it thickens.

This is how thick the mixture is before adding in the milk.
When well combined fold in the blueberries.

This is how the mixture looks when ready to spoon into the muffin tin.
Pour into cupcake cases and bake for 25 minutes.
Check with a skewer if it comes out clean they are ready.
