Honey Lemon Chicken

This dish would have to be one of my all time favourites. It is simply so pleasing and delicious, showing how a top-end meal can be made from a few basic ingredients. Letting the chicken simmer in the juices for the final step rewards you with a succulent and tender meat.

It also doubles as an excellent flu-fighting dinner, as the combination of honey, lemon, ginger and chilli work together to provide an immune system boost.



Preparation Time: 10 minutes plus chosen marinade time
Cooking Time: 40 minutes
Makes: 4 servings

Ingredients
500g chicken breasts, sliced into palm sized pieces
bunch coriander, roughly chopped (to serve)
4 portions rice (to serve)

Marinade
1 tbsp soy sauce
1 tsp sesame oil
1 tbsp peanut oil

Sauce
grated rind of 1 lemon
2 tbsp lemon juice
2 tsp ginger, grated
2 tbsp honey
2 tsp sweet chilli sauce


Method
  • Mix together the marinade ingredients and coat the chicken pieces. Allow to marinade for at least an hour (overnight if possible). Drain the chicken and reserve the marinade coating.



  • Meanwhile, combine the sauce ingredients in a small bowl and mix well.



  • Over a high heat, brown the chicken for 3 mins each side in a pan.



  • Reduce the heat and add both the marinade and sauce to the pan, and let it simmer for about 30 mins. The sauce should reduce to a thick syrup consistency.



  • Serve on a bed of steamed rice with a handful of the chopped coriander.
