Honey Lemon Chicken
This dish would have to be one of my all time favourites. It is simply so pleasing and delicious, showing how a top-end meal can be made from a few basic ingredients. Letting the chicken simmer in the juices for the final step rewards you with a succulent and tender meat.
It also doubles as an excellent flu-fighting dinner, as the combination of honey, lemon, ginger and chilli work together to provide an immune system boost.
Preparation Time: 10 minutes plus chosen marinade time
Cooking Time: 40 minutes
Makes: 4 servings
Ingredients
500g chicken breasts, sliced into palm sized pieces
bunch coriander, roughly chopped (to serve)
4 portions rice (to serve)
Marinade
1 tbsp soy sauce
1 tsp sesame oil
1 tbsp peanut oil
Sauce
grated rind of 1 lemon
2 tbsp lemon juice
2 tsp ginger, grated
2 tbsp honey
2 tsp sweet chilli sauce
Method
Mix together the marinade ingredients and coat the chicken pieces. Allow to marinade for at least an hour (overnight if possible). Drain the chicken and reserve the marinade coating.
Meanwhile, combine the sauce ingredients in a small bowl and mix well.
Over a high heat, brown the chicken for 3 mins each side in a pan.
Reduce the heat and add both the marinade and sauce to the pan, and let it simmer for about 30 mins. The sauce should reduce to a thick syrup consistency.
Serve on a bed of steamed rice with a handful of the chopped coriander.
