HoneySoy Chicken StirFry

Quick and easy, this dish is the ideal week night dinner.



Since I'm cooking for two people, I only use one chicken breast and one packet of noodles but feel free to use as much as you like!

Preparation Time: 10 minutes
Cooking Time: 20 minutes
Makes: 2 servings

Ingredients
1 chicken breast, cubed
1 packet thick Hokkien noodles
1/2 brown onion, diced
2 cloves garlic, chopped finely
2 chillies, chopped finely
1 carrot, sliced
Handful snow peas, topped and tailed

Sauce:
4 tbsp honey
2 tbsp soy sauce
1 tbsp lemon juice
1 tbsp plain flour
Teeny, tiny splash boiling water

Method
  • To make the sauce, combine all ingredients in a bowl and whisk well. Taste, ensuring that the sauce is equally sweet, salty and sour.

  • In a large wok, heat a splash of oil and stir-fry the onion, garlic and chillies for a few minutes until onion is soft.

  • Add chicken and fry until sealed.

  • Add carrot and snow peas, cook until chicken is white all the way through.

  • Finally stir in noodles and sauce, stirring until sauce thickens.

  • Serve hot.
