Hot Cross Bun Pudding
Did you buy too many Hot Cross buns again this Easter? Well I did. I didn’t waste them though. I froze them and then decided to turn them into an Easter version of a Bread and Butter pudding. The ingredient sizes will depend on the size of your baking dish.
Serve with cream or ice cream. Yum.
Preparation Time: 10 minutes
Cooking Time: 75 minutes
Makes: 8 servings
Ingredients
3-4 Hot Cross buns
3-4 eggs
2- 2 ½ cups of milk
½ cup castor sugar
Method
Turn on oven to 150C.
Select 2 oven proof dishes. One will need to easily sit inside the other.
Break the buns into quarters and distribute around the small baking dish.
Break the eggs and sugar and mix with a stick blender until creamy.
Slowly add the milk and beat until slightly frothy.
Pour slowly over buns until they’re just covered.
Allow a few minutes to soak.
Place this dish into your larger dish and carefully place in the oven.
Fill the larger dish with water until it’s half full.
Bake slowly until the pudding is set and brown on top.
