Hot Cross Buns

Easter is coming up, there is no better way to celebrate than by baking some delicious hot cross buns for your family and friends. It is perfect for the cooler season, the aroma will just fill the house creating a wonderful atmosphere.

Preparation Time: 2.5 hours
Cooking Time: 20-25 minutes
Makes: 12 large buns or 15 smaller buns

4 cups plain flour.
1/4 cup caster sugar
3 teaspoons spice mix
1.5 cups sultanas
40 grams butter
300ml milk
2 eggs , lightly beaten
2, 7grams bags of dried yeast

Flour paste
1/2 cup flour
4-5 tablespoon water

Sugar glaze
1/3 water
2 tablespoon sugar


Combine flour, yeast, sugar and spice mix in a large bowl.

Melt butter in the microwave. Add milk to butter. Heat until lukewarm.

Add warm milk mixture, currants and egg to the dry ingredients.

Mix dough with a flat knife until dough comes together.

On a floured surface knead dough for 10 minutes or until smooth. Place in a lightly greased bowl and cover in plastic wrap. Set aside for 1.5 hours.

it should double in size

Line a tray with baking paper. Preheat oven to 190ÂșC.

Punch dough into original size and knead on floured surface until smooth.

Divide into even portions placing them 1cm apart on the tray. Cover with plastic wrap and set aside for 30 minutes.

I halved the mixture, making some choc chips buns

Make the flour paste
mix flour and water, adding more water if it is too thick.

Put mixture into a zip lock bag and snip of one corner. Pipe mixture over buns.

Bake for 20-25 minutes.

Make glaze
Place water and sugar into a bowl and microwave for 2 minute. Brush glaze onto the cooked hot cross buns.

serve the buns hot or cold.

Note: I split my batch, making half of them choc chip, the other half sultana
