Hot Halloumi Wraps
Make lunch more interesting with a tasty hot halloumi wrap with red pepper, onions, rocket and pesto
I always keep a block of halloumi cheese in the fridge. It's great on the BBQ, added to pasta or makes a tasty filling for a sandwich. If you're bored of the same old sandwich for lunch then why not try this hot halloumi wrap.

Makes: 2 servings
Ingredients
Block of halloumi cheese
2 tortilla wraps
Half a red pepper
Half an onion
Dollop of mayonnaise
2 teaspoons of green pesto
Handful of rocket leaves
Olive oil
Method
Slice the onion and red pepper and then fry in a little olive oil until the onion is soft and the pepper still has a little crunch.
Slice the halloumi length ways about 1.5cm thick. Too thin and they will be too crisp, too thick and the cheese won't have time to become soft in the centre.
Sliced halloumi
In a hot, dry pan (no oil needed), fry the halloumi slices until both sides are golden.
It only takes a few minutes for the halloumi to toast to a golden colour on the outside
Dollop some mayonnaise and a teaspoon of green pesto onto each tortilla wrap.
Spread the mayonnaise and pesto out over the wrap.
The mayonnaise and pesto add a little extra flavour to this wrap
Place some rocket in the middle third of the tortilla wraps.
Add a few pieces of the fried onion and red pepper.
Top with a couple of slices of halloumi on each wrap or more if they are large.
All loaded up and ready to wrap up
Fold the bottom of the wrap up and over the filling by a few centimetres and then fold both sides in to make your wrap.
Folding the bottom of the wrap with stop the filling falling out while you are eating it
