Sunny side up, the only way, or over easy - over hard really! I like my yolk runny, this is the ideal way to fry. Remember with any egg dish, the fresher the egg, the better the result.
Preparation Time: 12 seconds not including time to heat the pan.
Cooking Time: 2 - 3 minutes

Place a non - stick fry pan on to heat. Do not over heat.
Place a small amount of vegetable oil in the pan. The important part is not to overheat the pan. To check its ready put a drop of water into the oil, if it cracks it is ready, if it sizzles and splatters its too hot.
Crack the egg into the pan, if the pan is too hot the egg will bubble and colour quickly which is not ideal. Cover with a stainless steel bowl and cook for a minute and a half, lift the lid and check on progress.
There should be an opaque tinge of white covering the yolk.
This is "sunny side" up, for "over easy", do not cover the egg with the bowl, just carefully flip the egg over after 2 minutes then serve immediately, don't break the yolk though.
Anything else is a waste of eggs but there is a thing called "over hard", same as over easy but cook it for longer until the yolk is hard.
