Howdy Partner Chowder
I grew up around a lot of Americans. If they have one thing going for them, it may just be this belly-filling meal that combines a whole bunch of fresh produce into a crowd-pleaser that's tasty, easy to make and easy on the budget. Enjoy!
Preparation Time: 15 minutes
Cooking Time: 40 minutes
Makes: 4 servings
Ingredients
3 large potatoes
1 brown onion
3 sweetcorn cobs OR 1 can of sweetcorn
200g bacon
2 T oil
1 ½ T plain flour
250mL milk
200mL water
salt
pepper
(optional) cheese to top
Method
Peel & chop the potatoes into 1cm pieces, dice the onion and use a sharp knife to remove corn kernels from the cobs.
Heat the oil in a large pot or saucepan and cook the onion for 1 minute.
Add the potato and corn and cook, stirring, for 5 – 8 minutes.
Add the flour and stir well to coat. Season with a pinch of salt.
Add milk and water – bring to the boil then simmer, stirring regularly, for 15 – 30 minutes or until the vegetables are soft. Turn off the heat and give it a vigorous stir, using the spoon to slightly smash the potatoes.
Meanwhile, cook the bacon in a separate frypan.
Divide chowder amongst bowls and top with the bacon and, if your heart desires, some cheese or cracked pepper.
Serve with toasted crusty bread.
