Ice Cream Cake Cups
This is a simple dessert that anyone will love! Using bananas as the base of the ice cream is easy, yummy and you can create different varieties: chocolate, peanut butter, vanilla etc. It is a perfect dessert to whip up on a hot summers night or day!
Preparation Time: 20 minutes, does not include freezing time
Makes: 4 servings
Ingredients
5 Very Ripe Bananas, chopped and frozen overnight
1/2tbsp Cacao or Cocoa
150g packet Classic Oreos
100g White Chocolate
150g Milk Chocolate Chips
Dash of Milk, may be needed
Method
Freeze banana discs over night or for a few hours. Place half of the frozen bananas in food processor and blend until smooth, approx. 1-2minutes. You may need to add milk, I use rice, if your processor is struggling.
Place the now smooth bananas/ice cream into a container and return to the freezer. Repeat first step but add in 1/2tbsp of cacao. You can use cocoa if it is all you have, I just prefer cacao. This will make the chocolate ice cream layer.
Place into a separate container and return to the freezer while you make the cookie layers.
Break up Oreo cookies and place in processor. Blend until it has turned to crumb.
Take your cups, glasses or ramekins and place a spoonful of cookie crumbs and press down into the bottom.
You then layer the chocolate banana ice cream, more cookie and then the plain banana ice cream. Remember to press the cookie crumbs down, but not too hard as it will squish into the ice cream. Return back to the freezer while you prepare the chocolate top.
Melt milk chocolate (you can use dark if you prefer) and white chocolate in separate bowls.
Add a spoonful of milk chocolate and then a spoonful of white as the top layer. Use a knife and carefully swirl the chocolate around to create the marble look.
Place back in freezer for the chocolate to set, roughly 10-20minutes.
Munch.
