Indian Rice Pudding

‘Rice Kheer’ is a form of rice pudding cooked with milk and sugar and flavored with dry fruits. It is a very popular one pot dessert in India and is prepared usually during functions and festivals.

Soaking time: 1 hour
Preparation Time: 5 minutes
Cooking Time: 30-45 minutes
Makes: 6-7 servings

Ingredients
1 cup rice
1 tsp ghee
4-5 cups of milk
1 spoon milk powder
3-4 tsp sugar
1/2 spoon cardamom powder
1 spoon vanilla essence
Dry fruits like cashew nuts, almonds and raisins

Method
  • Take a cup of rice and wash it thoroughly. Now soak it in water for around an hour.

  • After an hour, drain the water out from the rice.
  • Heat a little ghee in a deep bottomed pan and transfer the rice into it. Stir the mixture well.

  • Now add the milk to it and continue to heat it on a medium flame.

  • Once the milk starts to boil, simmer and add sugar and stir it continuously till the milk thickens.

  • Now add the dry fruits such as cashew nuts, raisins, vanilla essence and cardamom and let it cook it for another 5-7 minutes on a low flame.

  • Switch off the heat and serve the ‘Kheer’ hot or you can refrigerate it and server it cold.
