Italian Beef Casserole

This is a hearty casserole, that is made even more so by the addition of some red wine. It doesn't have to be Italian wine, but as the recipe came from an Italian website it seems appropriate.



Preparation Time: 15 minutes
Cooking Time: 2 - 2 1/2 hours
Makes: 2 servings

Ingredients
500g chuck steak
1 large carrot
2 sticks of celery
1 small, or half a medium, onion
1 tbsp olive oil
25g butter
1 glass red Italian wine
Flour for dusting
Salt and pepper


Method
  • Finely chop the carrot, onion and celery.



  • Heat the oil and butter in a heavy casserole or sauté pan.

  • Dice the beef into bite size pieces and dust with the seasoned flour.





  • Once the butter stops foaming add the vegetables to the pan and cook gently for about 5 minutes until starting to soften.



  • Add the beef to the pan.



  • Continue to cook until the beef is browned on all sides.



  • Add the wine, scraping any bits of meat and vegetables from the bottom of the pan. The flour will cause the liquid to thicken within a minute or two.





  • Add the beef stock, bring everything up to heat, cover the pan and reduce to a simmer. Check and stir from time to time and serve once the meat is tender.
