Italian Grissini

These crunchy bread sticks are great as a snack or for dipping. Top them with your favourite spices or leave them plain to hero your accompaniments.



Preparation Time: 70 minutes
Cooking Time: 20-25 minutes
Makes: 24 bread sticks

Ingredients
200 ml of warm water
1 teaspoon instant dried yeast
50 ml olive oil
375 grams of plain flour
30 grams of melted butter
1 teaspoon of sea salt

Optional toppings
Himalayan salt
Dried rosemary
Green jalapeno salt
Grated Parmesan

Method
  • Place warm water and yeast into mixing bowl and stir gently. Yeast will start to activate and froth after a few minutes.
  • Add oil, flour, butter and salt. Stir until dough comes together.
  • Empty onto lightly floured surface and knead for 5 minutes. Dough will be beautifully smooth and elastic.
  • Place dough into greased bowl and cover with plastic wrap.

  • *Rest for around an hour or until dough has roughly doubled in size.

  • Preheat oven to 190 degrees.
  • Divide dough into 24 pieces. Each will weigh 25-30 grams. Roll into lengths around 25 cm long. Try to keep them thin so they will dry out and give a perfect crunch.

  • Brush with water and sprinkle over your favourite toppings. I made three types: Rosemary with Himalayan rock salt, Parmesan and Green Jalapeno Salt.
  • Bake for 25 minutes until golden.
  • Allow to cool completely on a cooling rack for maximum crunch.
