Cheese on toast is one of the easiest recipes for a quick lunch. However, you can make it a lot more interesting with very little effort and some Italian bread and flavourings.
Mozzarella is lower in fat than cheddar and melts wonderfully to create this lunchtime treat.

Makes: 1 servings
Ingredients
Half ciabatta loaf or 2 ciabatta rolls
6 tsp red pepper pesto
10 thin slices firm mozzarella
Cracked black pepper
Method
Cut the ciabatta loaf or rolls in half.
Toast the outside, uncut sides under a medium grill.
Turn over the ciabatta, and spread over the red pepper pesto.
Lay over the thinly sliced mozzarella and grill until the cheese has melted, starts to bubble and turns golden.
Sprinkle over some cracked black pepper and serve.
