Jam & Coconut Slice

This old fashioned favourite will be sure to please the masses. It is ideal for school lunch boxes or a morning snack with a cup of tea.

Preparation Time: 15 minutes
Cooking Time: 45 minutes
Makes: 8-10 servings

2 cups of plain flour
1/2 cup of caster sugar
125g butter
1 egg
1 tsp vanilla essence

Filling/ top
1 cup of strawberry jam
1/2 cup of caster sugar
1 egg
2 cups of desiccated coconut

Preheat the oven to 180 degrees.
Using a beater or food processor, combine the flour, caster sugar, vanilla essence and butter until a crumb has been formed.
Line a greased baking dish and pour in the base mix.
Firmly press the crumb base down to compact it.

Bake in the oven for 20 minutes or until golden brown.
When the base has been removed from the oven, spread the jam over the base so it is entirely covered.

In a small bowl, beat the 2 eggs and remaining caster sugar until light and foamy.
Fold in the coconut and pour on top of the slice.
Spread the coconut mix evenly and bake in the oven for a further 25 minutes.

Remove from the oven when it is golden brown.
Do not remove the slice from the dish until it is completely cooled.
Portion to your desired size.

There is an error. There should be 3 eggs; one in the base and 2 in the coconut mix.

This recipe still appears incorrect as the eggs are listed separately but then the topping asks for 2 eggs. Confusing. Is there an egg required in the base?

Why are the eggs separated by 'base and filling. when both eggs are used for filling?
that is an error, i'll change it
