Jam Oat Bars

Muesli bars are a great go to snack but are often filled with sugar and fat. These are a healthy, low fat and low sugar oat bar which are easy to whip up. I used Henry and Jones chia seed and blood orange jam which has no added sugar and isn't too sweet. If using regular jam, use less.

Preparation Time:5 minutes
Cooking Time: 35 minutes
Makes: 16 Bars

Ingredients
2 free range eggs
45 grams roasted coconut chips
240 grams chickpeas
200 grams blood orange and chia seed jam
2 cups rolled oats

Only 5 ingredients.


Method
Chickpea and egg paste.


  • Drain and blend one can of chickpeas with 2 eggs until there is a smooth paste.

  • Coconut and chickpea paste.


  • Pour into a large bowl and mix with the roasted coconut chips.
  • Stir through the jam.
  • Lastly stir through 2 cups of rolled oats.



  • Press into a well greased baking tray.



  • Put into a 180° oven for 30-35 mins.

  • Firm and bronzed.


  • Take out of the oven and allow to cool slightly.



  • Cut into bars or squares and store in an airtight container.

  • These healthy yummy bars are only 110 cal each and have 3 gm fat, 18.4 gm, carbs and 4.3 gm of protein.
    Instead of buying jam make your own! It's super easy and tastes amazing!
