Jamaican Pumpkin Fritters

The spices used in these fritters turn your kitchen into a fragrant room, that you'll want to stay in all afternoon. The fritters are extremely moreish, filling, and make a fun breakfast, exciting starter or an appetising dessert.

Preparation Time: 15 minutes
Cooking Time: 3-4 minutes
Makes: 12 servings

450g pumpkin
2 eggs
60g salted butter
120ml milk
1 tblsp rapeseed oil (for frying)
1 tsp vanilla extract
1/2 tsp cinnamon
1/2 tsp grated nutmeg
Half a crushed clove
175g self raising flour

To serve:
1 tblsp honey
5 prunes
3 tblsp yogurt

Carve out two chunks from the pumpkin.

Using a knife remove the seeds and 'stringy bits'.

Peel and finely grate the pumpkin.

Scramble the eggs and add to the pumpkin.


Add the rest of the ingredients.

Mix to a thick batter.

Heat the oil in a frying pan over a medium-low heat, then using a tablespoon at a time, in batches of four 'drop' the batter into the pan and cook for 2-3 minutes.

Using a spatula turn over to cook the other side.

Once golden on both sides drain on kitchen roll and keep warm.

Repeat with the rest of the batter, or store in the fridge, covered with cling film for one week.

Serve as a pancake stack and enjoy with yogurt, fruit, and drizzled with a healthy serving of honey.

This is an almost healthy breakfast pancake. I love it served with a large dollop of Greek yogurt and chopped prunes/raisins when I'm feeling indulgent
