Jammy Bread and Butter Pudding

Bread and butter pudding is a classic dessert. Here I've made it a little bit more interesting by using panettone, whih is a sweet Italian bread and layering the bread with raspberry jam. It makes a sweet and gooey dessert, almost like a jammy doughnut.



Preparation Time: 20 minutes
Cooking Time: 30-40 minutes
Makes: 6 servings

A traditional Italian Christmas panettone


Ingredients
1 large panettone
50g butter
4 tbsp raspberry jam
500ml milk
2 large eggs
2 tbsp sugar
1 tsp vanilla extract

Method
  • Preheat the over to 180 Celsius and grease a large baking dish.
  • Slice the panettone into about 8-10 slices.



  • Spread the first layer of panettone with butter and jam.



  • Arrange in the baking dish.
  • Butter and spread jam over the next layer of panettone and put it on top of the other layer to make a jam sandwich.
  • Use the ends of the panettone to fill the gaps in the baking try. Dab these with a little butter and jam.



  • Make up the custard mixture by whisking the eggs, sugar, vanilla extract and milk together.



  • Pour this over the jammy panettone and leave to soak in for 15 minutes.



  • Put in the pre-heated oven and bake for 30 to 40 minutes, or until the custard has set and the top is golden-brown.



  • Serve immediately, with cream. It's also delicious served cold.
