Japanese Chicken Yakitori

Chicken Yakitori is a very popular Japanese street snack. They are grilled chicken skewers dipped in sweet sauce. You can eat them by themselves as a snack or with steamed rice. Originally, they are made with Asian leek but this recipe is using asparagus.



Preparation Time: 40 minutes
Cooking Time: 10 minutes
Makes: 4 servings

Ingredients
1kg chicken thigh fillets, diced
12 spears asparagus
12 bamboo skewers
steamed rice, to serve

For Marinade
1/2 cup soy sauce
1/4 cup chicken stock
1/4 cup mirin*
1/4 cup caster sugar

Method
  • Soak the bamboo skewers in cold water for 15 minutes. Drain.

  • Combine all the marinade ingredients in a saucepan and bring to the boil. Reduce heat to medium and simmer for 5 minutes until thickened slightly. Allow to cool completely.

  • Thread the chicken and asparagus onto skewers. Brush with sauce.

  • Preheat grill on medium-high heat until hot. Grill skewers, continue basting the sauce until cooked through. Serve with steamed rice.
