Japanese Hamburg Steak
Hamburg Steak is a Japanese style steak of hamburger patty that is cooked in stock, tomato and tonkatsu sauce, giving each patty a luscious tangy-sweet coating that balances the rich, melt-in-the-mouth patty.

Makes: 4 servings
Ingredients
For the Patty
500g ground beef
1 egg
1 small brown onion, finely diced
1 clove garlic, minced
1 cup Japanese Panko (breadcrumb)
2 tablespoons tomato ketchup
1 teaspoon soy sauce
a pinch of salt and black pepper
For the Sauce
1/4 cup vegetable stock
1/4 cup tomato ketchup
1/4 cup tonkatsu sauce
steamed Japanese rice, to serve
salad greens, to serve
Method
In a bowl, add all the patty ingredients and mix with hand until combined. Divide into 4 portions and roll each portion to an oval-shaped patty.
Heat 1 tablespoon of vegetable oil in a frying pan. Add in the patties and fry for 3-4 minutes on each side or until dark crusts are formed. Transfer to a plate.
Pour in the vegetable stock into the hot frying pan and let it sizzle for a minute or so.
Add in the tomato ketchup and tonkatsu sauce. Mix well and bring to the boil.
Add in the patties and cook covered for 3-4 minutes then flip and continue to cook for a further 3-4 minutes.
Serve immediately with rice and side salad.
