Kangaroo Patties with Egg Veg

Simple, tasty, satisfying and healthy. Kangaroo is a wonderful meat - high in protein, low in fat and totally delicious. It can be difficult to cook right, but in burger patty form it is fool proof.



Makes: 1 servings

Ingredients
Kangaroo burger patty
Egg
Handful of baby spinach, washed
2 mushrooms, sliced
A few slices of red onion
1/4 red capsicum, sliced
1/4 green capsicum, sliced
3cm zuchinni, sliced
1/4 avocado, cubed
3 grape tomatoes
Fresh ground black pepper

Method
  • Heat oil in a large, heavy based pan and begin cooking your kangaroo patty, turning once.

  • Saute onion, mushroom, capsicum and zuchinni in the other half of the pan until everything softens (and hopefully browns a little).

  • Line your plate with a bed of spinach.

  • When your patty is cooked, remove it from the pan and add the avocado and tomato to the vegetables to heat through.

  • Fry an egg in the pan, making sure to leave your yolk gooey.

  • Plate up, season with cracked pepper and enjoy.
