Karaage Chicken with Kewpie Mayo

This dish can be served as an appetiser or over rice. Basically, Karaage chicken is Japanese inspired fried chicken with a sweet flavour and crispy texture.



Preparation Time: 10 minutes
Cooking Time: 25 minutes
Serves: 6-8

Ingredients
Karaage Chicken
3 chicken breasts
2 tsp sugar
2 tbsp soy sauce
1 tbsp ginger
1 tbsp rice wine
1 clove garlic
1/3 cup potato starch
cooking oil
1/3 cup green onion
1 cup rice (optional)

Kewpie Mayo
2 egg yolks
2/3 cup cooking oil
1 tsp salt
1 tbsp sugar
2 tbsp rice wine

Method
  • In a bowl mix sugar, soy sauce, ginger, garlic, rice wine.
  • Slice chicken into small pieces, and add to mixture, fully coating all the pieces.
  • Fill a separate bowl with potato starch and, fuller cover the already-coated chicken in potato starch.
  • Fill a pan with cooking oil and bring to medium-high heat. Add the chicken evenly around the pan and cook until golden brown and crisp.



  • Remove chicken from the pan, and pour over cooked rice.
  • In a small bowl, add egg yolks, cooking oil, rice wine, salt and sugar, then stir together.



  • Serve with, or drizzled over chicken, garnished with green onion (and rice).
