Key Lime Bliss Balls

These are truly delicious and are guaranteed to be an instant hit with any crowd. They are sugar free and suitable for many people with food intolerances. They are also easy and fun for children to make, although they will find it difficult to resist eating the mixture before they're all rolled.

Preparation Time: 20 minutes
Serves: Approximately twenty balls



Ingredients

3/4 cup dates
1 cup almond meal
2 tablespoons lime juice
2 teaspoons lime zest
1/2 cup shredded coconut

Method

  • Soak the dates in 1/2 cup of boiled water for one hour. Then blend them together to make a smooth consistency paste.

  • Blend dates


  • Add the almond meal, lime zest, and fresh lime juice to the date paste. Mix all ingredients together.
  • Using your hands, take a small portion of the date, almond and lime mixture and form it into round balls.

  • Date Paste mixture


  • Carefully roll each ball in shredded coconut individually. Now they are ready to serve as a healthy snack - enjoy. It is also a good idea to keep these bliss balls fresh in the fridge or freezer.
