This chocolate cupcake contains a delicious surprise - a hidden KitKat centre! Bite through the peanut butter frosting to reveal a crunchy centre within a light and fluffy chocolate cupcake.

Ingredients
To make the cupcakes:
1 cup plain flour
1/2 cup cocoa powder
1/2 teaspoon baking soda
1/8 teaspoon salt
1 cup granulated sugar
1/4 cup vegetable oil
1 egg
1 teaspoon vanilla essence
1/2 cup milk
6 fun-sized Kit Kat bars, broken into single wafers (12 wafers total)
To make the peanut buttercream frosting:
1 cup icing sugar
1 cup smooth peanut butter
1 teaspoon vanilla essence
80g butter
1/2 cup milk
Method
Preheat the oven to 180 degrees and line a cupcake baking tray with cupcake patty pans.
Combine the flour, cocoa, baking powder, and salt in a bowl.
In a separate bowl, combine the oil and sugar until smooth. Add the egg and vanilla essence and whisk together with a fork.
Pour the egg mixture into the flour mixture. Begin combining the ingredients by folding the flour into the egg mixture. Add small portions of milk, stirring, until a smooth chocolate batter forms.
Place 1 tablespoon worth of mixture into the bottom of each cupcake patty to cover the base.
Chop the Kit Kats into pieces and place a layer of Kit Kat onto the base cupcake layer.
Add a further tablespoon of cupcake batter on top of the Kit Kat layer.
Bake for 10-15 minutes, until cooked when tested with a skewer.
Allow to cool on a wire rack.
To make the peanut buttercream frosting, place the peanut butter, butter, icing sugar, and vanilla essence in a bowl and beat with an electric mixer until light and fluffy. Add the milk a little at a time, beating between each addition, to form the frosting.
Layer or pipe frosting on top of each cupcake, and top with a piece of Kit Kat.
