Korma Curried Meatballs

Makes: 4 servings
Ingredients
1 brown onion, finely chopped
3 garlic cloves, crushed
500g mince
2 eggs, lightly beaten
1 cup dried breadcrumbs
½ fresh flat-leaf parsley, chopped
2 tablespoons olive oil
¼ cup Patak’s Mild Korma Paste
2 x 400g cans diced tomatoes
½ cup natural yoghurt
Cooked couscous, to serve
Method
Combine onion, garlic, mince, egg, breadcrumbs and half the parsley in a bowl and season with salt and pepper.
Roll into balls.
Heat oil in a large non-stick frying pan over medium heat.
Cook meatballs, turning for ten minutes or until browned. Don’t worry too much if meatballs haven’t yet cooked through.
Transfer meatballs to a plate.
Add curry paste to pan and cook for 30 seconds or until fragrant.
Stir in tomatoes and ½ cup water.
Add the meatballs and simmer for 10 minutes or until meatballs are cooked through.
Serve atop prepared couscous with remaining parsley and a dollop of natural yoghurt.
