Kulich Bread

Kulich is the sweet version of the savoury Easter Cheese Bread . As you probably will have guessed, it is an enriched bread eaten between Easter and Pentecost. Baked in a long vertical mould, it is traditional in countries such as Romania, Russia, and Ukraine.

Preparation Time: 1 hour 45 minutes
Cooking Time: 30 minutes
Makes: 1 loaf

Ingredients
2 eggs
500g white bread flour
½ tsp salt
20g Truvia sweetener (or 75g caster sugar)
1 tbsp fast action yeast
1 tsp vanilla extract
75g margarine
1 orange
1 lemon
100ml almond milk
75g flaked almonds
100g raisins
100g icing sugar

Method

  • Mix together the flour, salt, yeast, sweetener/sugar, sultanas, and almonds together.



  • Zest and juice the lemon and orange, and add the zest to the mixture.



  • Rub in the margarine and eggs.
  • Put a tablespoon fruit juice to one side, and then mix the rest with the milk and vanilla extract.



  • Gradually add the liquid to the mixture to form a dough (you might not need it all).



  • Knead the dough for ten minutes and then leave to prove for about an hour.
  • Pre-heat the oven to 200 & #3872 ;C/ 180 & #3872 ;C fan/400 & #3872 ;F/6 Gas.



  • Put the dough in a flower pot and bake in the oven.



  • Mix together the icing sugar with the remaining fruit juice to form a runny icing, and drizzle over the bread.
