Kulich Bread

Kulich is the sweet version of the savoury Easter Cheese Bread. As you probably will have guessed, it is an enriched bread eaten between Easter and Pentecost. Baked in a long vertical mould, it is traditional in countries such as Romania, Russia, and Ukraine.

Preparation Time: 1 hour 45 minutes
Cooking Time: 30 minutes
Makes: 1 loaf

2 eggs
500g white bread flour
½ tsp salt
20g Truvia sweetener (or 75g caster sugar)
1 tbsp fast action yeast
1 tsp vanilla extract
75g margarine
1 orange
1 lemon
100ml almond milk
75g flaked almonds
100g raisins
100g icing sugar


Mix together the flour, salt, yeast, sweetener/sugar, sultanas, and almonds together.

Zest and juice the lemon and orange, and add the zest to the mixture.

Rub in the margarine and eggs.
Put a tablespoon fruit juice to one side, and then mix the rest with the milk and vanilla extract.

Gradually add the liquid to the mixture to form a dough (you might not need it all).

Knead the dough for ten minutes and then leave to prove for about an hour.
Pre-heat the oven to 200 ༠C/ 180 ༠C fan/400 ༠F/6 Gas.

Put the dough in a flower pot and bake in the oven.

Mix together the icing sugar with the remaining fruit juice to form a runny icing, and drizzle over the bread.
