Lamb Cutlets Pesto Cous Cous and Wilted Snow Pea Sprouts

Sometimes a rainy weekend calls for extra comfort food to be consumed. What do you do when you are faced with a high-quality dinner expectation? This is my dilemma...



The solution: Try this mouth watering lamb cutlets recipe. It is not only super easy to cook but is also absolutely delicious!

Preparation Time: 10 minutes
Cooking Time: 5 minutes
Makes: 4 servings



Ingredients
12 lamb cutlets
1 cup cous cous
3 tablespoon pesto sauce
3 tablespoon garlic infused olive oil
150g loose snow pea sprouts
50g roasted sweet capsicum
50g pickled baby gherkin
50g Italian Grana Padano cheese
50g caramelised onion & fig jam
Salt and pepper to season

Method
  • Generously spray a char-grill/fry pan with garlic infused olive oil. Preheat on high.



  • Char-grill the lamb cutlets for 3 minutes on each side. Remove and set aside.



  • Using the same pan, spray more garlic olive oil and quick stir-fry the baby snow pea sprouts for 2 minutes. Season lightly with salt.



  • Place couscous in a large bowl. Pour in 1 cup of hot water/stock.
  • Let the couscous stand for 3 minutes until all liquid has been absorbed.
  • Fluff the cous cous with a fork to separate grains.
  • Stir the pesto sauce through. Season with salt and pepper to taste.



  • Place 3 lamb cutlets on each plate with pesto couscous. Top with wilted baby snow pea sprouts, roasted baby capsicum and cheese flakes.



  • Serve with caramelized onion & fig jam and pickled baby gherkins.
