Lazy Treacle Cookies

Lazy Treacle Cookies

These tasty little cookies are so quick and easy you can almost make them while the kettle boils. If you don’t have treacle, you can substitute golden syrup or honey but the cookies will not be as rich and chewy.

Preparation Time: 5 minutes
Cooking Time: 10 minutes
Makes: 15 - 20 servings

100 g softened butter
100g sugar
1 tablespoon treacle
150 g self-raising flour

Lazy Treacle Cookies

Cream the butter and sugar
Stir in the treacle
Slowly add the flour, stirring in as you go

Lazy Treacle Cookies

Form into small balls and place on trays lined with baking paper. Do not flatten but allow room for them to spread

Lazy Treacle Cookies

Bake at 180 degrees for 10 minutes until light golden
Remove from oven and let them sit for a few minutes before transferring to cooler

Treacle Cookies

As an added touch you might like to sprinkle some sugar on top, but these cookies are already sweet enough on their own. Don’t worry if they sink while cooling – they’re supposed to. That’s what gives them their chewiness.
