Leaky Sides and Spiced Pumpkin

Leeks are a part of the onion family, and if you're like me, you cook with onions nearly on a daily basis. Leeks however, are generally forgotten as a main, or even side dish. Pumpkin, although celebrated during October, is rarely used a simple side dish, which means they are generally seen as a vegetable which requires too much 'effort'.

Merely boiled veggies are boring, but the way I've cooked them, these side dishes are brimming with flavour, and have a slight sweetness, too.

By seasoning these side dishes with simple herbs and spices, they're transformed from everyday vegetables, into something you'll want on the table every day.

Preparation Time: 5 minutes
Cooking Time: 15 minutes
Makes: 4 servings

2 Leeks
1/5 Pumpkin
Half teaspoon Mixed spice
Tablespoon Butter
Half teaspoon black pepper
Three mint leaves
Sprig of thyme

Chop the leeks into chunks.

Chop the pumpkin, leave the skin on.

Place in a saucepan with water and set to boil for 10 minutes.

Remove the leeks from the saucepan and place in a bowl.

Add a knob of butter.

Remove the pumpkin from the saucepan and tear/chop into chunks.

Leave the skin on and season with the mixed spice and butter.

Garnish the pumpkin with mint.

Garnish the bowl of leeks with the basil, thyme and pepper.


Enjoy spiced pumpkin and buttery, minty leeks, and you can enjoy a meat-free Monday at the start of every week.
