Lebanese Fattoush Salad
Fattoush is a Lebanese salad made with toasted slices of pitta bread and salad greens and vegetables. It's also often called 'peasant' salad. One of the key ingredients to the salad is the spice 'sumac', it gives fattoush its recognisable flavour.

Makes: 6 servings
Ingredients
[ADVERT]1 cos lettuce
250g cherry tomatoes
1 lebanese cucumber
1/2 bunch of radishes
4 spring onions
Bunch of parsley
1/2 bunch of mint
2 slices of pitta bread
150ml olive oil
1 tbsp sumac
50ml red wine vinegar

Method
Preheat the oven to 150ÂșC.
Cut the pitta bread into 2cm squares using scissors. Peel apart the two sides of the bread and place on a baking tray.
Place the bread in the oven for 10 minutes or until crisp.
Meanwhile, start preparing your salad vegetables. Tear the lettuce leaves into smaller pieces, cut the tomatoes in half, slice the spring onions, radishes and cucumbers, and roughly chop the herbs.
Please all salad vegetables in a bowl and toss.
Once the bread is crisp, mix it with the olive oil and the sumac. Do not add the bread to the rest of the salad until right before you are ready to serve. Otherwise it may get soggy.
When you're ready, add toss the salad with the bread and add vinegar and salt to season.
Sprinkle with a little more sumac and you're ready to serve.
